January challenge: new year, new recipes

Happy Saturday!

As I mentioned in yesterday's post, I'm getting ready to start a new challenge for the month. In December, I focused on tracking my food every day. I managed to follow through with that about 98%, including our time in Florida.

This month, I'm trying to focus more on changing up my meal planning. Welcome to the New Year, New Recipes Challenge!

Why this challenge? Rut Breaking!


First, meal planning and cooking at home helps our monthly financial budget. When I plan meals, we don't go out to eat as often.

I also believe it will help me with my Weight Watchers' point budgeting, too.  I control everything that goes into the dishes I prepare.

The issue? I get stuck in ruts. We have a solid rotation of meals we enjoy. But, I'm ready to try some new things, especially lower point options. Plus, I got a new Instant Pot from Santa. (If you know of some yummy, yet easy recipes, leave me a comment below or drop me an email!)

So, for the month of January, I've challenged myself to make at least 4 new (to me) recipes. I'll probably find most of them online. I may experiment and try to make something on my own. 

They say variety is the spice of life. That's what this challenge is all about!

And, this challenge actually got me to organize my pantry and spices, etc. Some the crap in the had been hiding out since the stone age, I think. But, I'm ready to go!

Awesome Tina! Thrilled to have someone else on board with me! I'll be posting the first recipe I'm trying later this week! My first Instant Pot Recipe: Cubed Steak with Peppers and Rice. :)

Freedom is only found once you believe in God and choose the righteous path. I still believe that God has purpose and made our destiny even when we are still young. I believe in him no matter what happens. Do not become too hateful about yourself, do not make yourself burn i the own fire you have caused and allow yourself to grow and be happy. It will come to you eventually when the time is right. Always allow yourself to the changes in life, in that way, we become better.
